The Stir-fry of Your Life

How often do you find yourself wrapped up in a warm blanket and procrastinating to go out ? Your tummy rumbles, but you had pizza yesterday so that’s out of question. This is me every Saturday and Sunday. So, I figured out a simple and to the point recipe for a stir- fry that tastes good as it is, ofcourse if you want you can always have it with a carb of your choice. Most importantly, it only takes 15 minutes to prepare. Almost all ingredients can be found in the vicinity of your refrigerator. Now, enough with the yada yada that nobody’s gonna read. (Thank you person of lovely nature who is reading this !)

From My Kitchen to Yours :

Home-Style Chinese Stir Fry

What You Need:

  • 1 tablespoon of Garlic (minced)
  • 1 tablespoon of Ginger (grated)
  • Cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water)
  • 1 tablespoon of Sesame seeds (optional, if you like them)
  • Chopped Green chillies as per liking
  • 2 bowls of Diced Vegetables of Your Choice

(Bell peppers, Mushrooms, Onions, boiled/cooked broccoli)

  • 1 bowl of Protein of Your Choice

( Tofu or Paneer or Chicken : cubed and pan-fried)

  • Salt and Pepper
  • 2 tablespoons of Oil

Method :

  1. On medium heat, heat up a pan with oil.
  2. Lower the heat, add in garlic and ginger sauté for 10 seconds. Make sure the garlic and ginger don’t burn or become dark brown.
  3. Switch to Medium heat. Now add in the Vegetables, mix them until they are cooked a notch below per liking. (as they will continue to cook when you add your protien choice) Also, I prefer keeping my veggies slightly crunchy for stir-fry.
  4. Lower the heat. Now put in the soy sauce, cornstarch slurry and seasame seeds (if you are using), mix well to incorporate.
  5. Add in the chillies and the tofu/paneer/chicken. Switch to medium heat and keep stirring for at least 5 minutes.
  6. Switch off the heat, Season with salt and pepper. Combine.
  7. Serve and enjoy !

The Only Pizza Dough Recipe You Need

Who said you couldn’t impress guests with pizza? They would definitely be impressed if you bake it at home, from scratch. Don’t worry, its the easiest thing in the world. I’d say its easier than baking a cake. In fact, the chemistry between the toppings, sauce and cheese is so simple and familiar – this might become your favorite to impress anyone stat.

The best thing about making pizza at home is you can roll out your desired thickness for the base, you can shape it the way you want (try pizza cones), you can experiment with what you want on your pizza (switch regular pizza sauce for pesto or curry) and most importantly, you can choose your own toppings and the amount (no guilt with extra cheese). Another amazing thing about pizzas are you can throw in any cooked leftovers with the right kind of sauce and you might just discover your favorite kind of pizza. I would recommend you to experiment with butter chicken and spicy tandoori sauce, top it off with generous amount of cheese and coriander.

What You Need:

2.5 cups (400 g) of All Purpose Flour
2 tablespoons (30 ml) of Vegetable Oil
1 cup (250 ml) of Warm Water
2 teaspoons (10 ml) of Granulated Sugar
1 teaspoons (5 ml) of Dry Yeast Powder
Salt to taste

Method:

  1. Combine all the ingredients mentioned above to form a dough. You can use a blender or use your hands, as per your convenience.

  2. Work the dough, generously using your knuckles, for about 10 minutes or more.

  3. Take a bowl, glaze the inside of the bowl with oil. 

  4. Make a ball of the dough and place it in the bowl, rub a little oil on top of the dough.

  5. Cover the bowl and allow it to rest for 20 – 30 minutes.

  6. Later, the dough is ready to be rolled into pizza bases. You can use a rolling pin or your hands to make a pizza base. 

  7. Over the base, spread pizza sauce, add your toppings and cheese.

  8. Place it in the oven for 10 – 15 minutes at 230 degree Celsius. 

  9. Enjoy your homemade pizza !

Monsoon has finally arrived in Mysore, so its the perfect weather to curl up in a blanket and pamper yourself. Talking of Pampering whether its your lover, mother , best friend or yourself, a home-baked Aussie cupcake (or cupcakes) will definitely work.

I had mentioned earlier about ‘ Fairy’s Touch’, the Melbourne Cupcake place I discovered recently – run by this amazing couple with a passion for doing what they do.

So, here’s a little ice-breaker with Mrs. Poornima, the co-founder at Fairy’s touch .

Introduce yourselves.

Australian trained couple settled in Mysore, who love to bake delectable homemade cakes and cupcakes.

Tell us something about your journey.

They say it is never too late to learn! Our passion for learning culinary arts got us to pack our bags and fly across to Australia. At the age of 37, Som graduated out of Kangan Batman Institute of tafe, Melbourne. While Som had his heart and soul into commercial cookery, I (Poornima) had the opportunity of attending a workshop under the guidance of Miss Jennifer Graham, who is known as the ‘Cupcake Queen’ of Australia. Why call it ‘Fairy’s Touch’?

Till date I really do wonder if it is a myth or reality that a dimple in the chin refers to as the fairy’s Touch. I am blessed to have a dimple on my chin. Hence the name.

How Do you function ?

At Fairy’s Touch, Som does the baking and I do the frosting. They say a cupcake is at its best only when it is frosted. We are home bakers, who believe in bake fresh method. We do not store cakes or cupcake as we bake on order.

So, do you guys do orders ?

Yes, we do. We also conduct exhibition and sale of cupcakes every fortnightly.

What would be your FAVORITE kind of cupcake ?

Our favorite cupcake is the Red Velvet cupcake filled with cream cheese

Which is the most loved cupcake from your menu ?

It’s hard to choose any particular flavor as we keep experimenting and bring out new flavors with each passing day. Best selling ones are our chocolate cupcakes topped with Rich chocolate and Choco Mocha.

What is the hardest thing about making your passion your job ?

Making your passion your job does not give enough time for ourselves, more so because we are home bakers it becomes difficult for us to differentiate between home and workplace.

Fairy’s Touch aspires to introduce to Mysore delicacies from across the world at affordable prices so that our customers do not have to travel miles to savor them.

I promise, you will be able to taste their love for baking in each bite – as the mellow flavor of the cream tickles your taste buds, the soft light heart-ed cake will balance it all , giving you the right kind of sugar rush.
Being Home-baked, the cupcakes are Honestly Delicious. We all know the usual bakeries in town do not serve cupcakes which are fresh or promising ; unless pre-ordered and sometimes even then.

Their Chocolate Ganache frosting is probably the best frosting I have had over a cupcake – The flavor being so rich and the texture thick and creamy. I feel what I notice most generally in any dessert is the sugar balance – and their cupcakes ace it.
If you like fruit flavors,  you have a lot of options to choose from. They even have Blue Curacao frosting over Blueberry cupcake – well that’s something ?!

In an informal conversation with her, I learnt that they specialize in New York styled Sliced Pizzas as well. Let’s hope beside desserts, we get a taste of their other culinary masterpieces in the future.

Chinese Restaurants In Mysore

IMG_20160409_220309Chinese is a pretty popular Cuisine in India. Being loved by people irrespective of culture and geography, our restaurants and in-hotel restaurants serve a fair share of “Indian Chinese”, labelling themselves as multicuisine.

In Mysore, Indian Chinese has introduced it’s very own preparation called “Gobi Manchurian”. You must try this on your visit here.

Being a college student here, I have become familiar with quite a number of Pan-Asian Restaurants. Besides Chinese, most of them serve a fair share of Thai. None of these places serve Japanese food, so no tempura or sushi.
Here is my List of Specifically chinese cuisine restaurants in Mysore :

1. CHINESE CORNER

Ambiance: 3/5
Food: 4/5
Recommended: Manchow Soup, Chinese Chopsuey, Jade Chicken

Ambiance is pretty basic.The place is air conditioned and service is a little slow. The Food quality is pretty good and the quantity is ample. Weighing Location, Ambiance and Food together, Its the most recommended place on this list.

2. MOMO HOUSE

Ambiance: 1/5
Food: 3/5
Recommended: Spicy Momos in Shezwan Sauce, Tao Special Noodles

The location is kind of tricky and the ambience is not that great either. The place is rather small and not air conditioned. Despite all this, this place is 2nd on my list because of the noodles they serve here. The noodles are not oily, not overcooked and just one of its kind. Also the Momos here, I find the best in the city. I have heard about their honey Noodle dessert too.

3. HAKKA NOODLES

Ambiance: 2/5
Food: 3/5
Recommended: Tshing Hai Chicken, Stuffed Mushroom stir fry

An April That Was.

How have you been?  Hope You guys are doing well 😊
The Indian Summer is getting the best of me. Despite the heat and sun, I am happy to have met again the true love of my life – Mangoes 💗 I just can’t get enough of them. After having the first Mango of this year, I closed my eyes with the first bite and in that moment I knew it was Love. That moment inspired me to draw this illustration below. (too much drama?! I know, sorry)

April has been a crazy month this year. From going Social on Facebook to discovering the Bangalore Food Fete, its been a mixed bag. Now, it’s easy to share posts from my blog between friends and beyond – Thanks to Facebook!

Another Amazing highlight is the Bangalore Food Fete Season 2 (17th April, 2016),  I loved every bit of the experience. The Food, the people, the music, the vibe… Everything was great. I tried a lot of new dishes in the fete like – Churros,  Chicken Semiya, Tornado Fries, Flavoured Ice Tea, Cheesecake Tub etc. Also, I discovered the Most wonderful Brown Sugar Cookies. I loved them so much I carried a few back home ( and, ate them a-bite-a-day – scared that they would get over).

Bake The Best Mud Cake Ever with Me 😊

How are you doing? 
The Festive season seems to be over 😔, but you don’t need a festival to splurge over the mud cake I am talking about. 😇
Don’t worry this recipe is ‘No Fail ‘. You don’t need special baking skills, all you need is desire to bake, an oven and the ingredients. You will fall in love with the rich moist flavour and the softness of the cake – that I bet won’t be easy to share.😜

I know usually the recipes you find online are not reliable but this one is. I promise. And dont worry about expenses, its going to be pretty light on your pocket.

HEAVENLY CHOCOLATE MUDCAKE

What You Require :
An Oven: preheated at 300°F or 150°c
A Stove
Pan with a cup of water
Heat safe bowl: Big enough to fit over the pan
Measuring Cup, whisk etc.
Baking Dish: About 8 cm in diameter and 10 cm deep
Parchment paper/baking paper/the alternative*
A Knife, to check if the cake is done.

*The alternative: grease your baking dish with butter and lightly dust flour over it – A thin layer will be formed which will prevent the cake from sticking to the dish.

Ingredients :
(in order of need)
1 1/4 Cups or 250g – Unsalted Butter
8 ounces or 250g – Chocolate
2 3/4 Cups or 550g – Granulated Sugar
2 tablespoon – Instant Coffee Powder
3/4 Cup or 175ml – Hot Water

1/2 Cup or 125ml – Milk
4 – Medium sized Eggs

2 Cups or 300g – All Purpose Flour
1/2 Cup or 55g – Cocoa Powder
1/2 teaspoon – Baking Soda
2 teaspoon – Baking Powder
1 teaspoon – Salt
2 tablespoons – Vegetable Oil

Method:
Preheat your oven as mentioned before.

Step 1:
On the Stove, place a pan with a cup of water, keep it on low heat. Over the pan, place your mixing bowl.

This is done to create an indirect source of low heat, inorder to prevent the ingredients from burning or cooking. We just want the ingredients to melt.

Step 2:
To the bowl,  Add Butter, Sugar and chocolate. Let it all melt.

Step 3:
In a cup, add instant coffee to the hot water to create a solution. And, add this to your mixing bowl (step 1 and 2)

Step 4:
Once all the ingredients have melted into a uniform smooth mixture, take your mixing bowl off the Stove.

(Melting may take time, so to save time you can do step 7, while monitoring the bowl over the pan. You can come back to this, when you are done with step 7 )

Step 5:
Add Milk to the bowl and mix it in, let the mixture cool for a minute.

Step 6:
Now add the eggs and use a blender or a whisk to blend it in. Make sure you do this before you go ahead with the next step.

Step 7:
In a separate bowl, combine the dry ingredients – combine flour, baking soda, baking powder, cocoa powder,  salt. Mix well.

Step 8:
Add the mix from step 7, to the batter of step 6.

I prefer Adding a little amount of the dry mix and mixing it well. Then followed by little more amount and so on. This makes it easier to mix.

Step 9:
Pour in vegetable oil and use the hand blender one Last time for about 2 minutes.

This will make sure your batter is homogenous.

Step 10:
Keep your baking dish ready with baking paper (or the alternative). 
Add your batter to the baking dish, fill it about 1 cm less. This will prevent your batter from spilling out, when it begins to rise.

Step 11:
Place the baking dish in the oven and bake it for 1.5 hours maximum at 300°F or 150°c.

Keep a Check on your cake with a knife. For a perfect bake, your knife will come out clean, when poked deep in the cake at the centre point.

Step 12:
Once the cake is done, all it to cool for good 15 minutes. Take it out and enjoy! 
I covered mine in Chocolate Ganache cream.

HACKS :
Chocolate – I used Dairy Milk Silk which is fairly sweet enough, so I reduced the amount of sugar I put in the batter.
Butter – I used Amul Butter, which is salted. So I just skipped adding salt to the batter.

Being in Hostel most of my life and having my heart broken by a lot of friends, I have successfully come to a conclusion – Food is the Best Friend that You’ll ever have.

LET ME CONVINCE YOU:

 

1. Best Friends never Leave you alone

Food is your best companion in everything. Whether, it watching a movie on a lazy Sunday or anything else on the lines of “Today I don’t feel like doing anything…I just wanna lay in my bed.”

 

2. Best Friends get you through your bad times

How many of us have had a tub of frozen dessert for dinner with tears in our eyes?

 

 

3. Best Friends listen. And Don’t Judge You.

The days you are really upset about something and you just need someone to talk to – who won’t judge you. So instead of picking up the phone, you just talk to yourself and you didn’t even notice that jar of cookies listening to everything. And it would taste just as delicious as it did before. Food doesn’t judge you.

4. Best Friends love you unconditionally

Proof: Your Love Handles

5. Your Perfect 2 a.m. Friend

So, you had a really bad fight with your boyfriend in the middle of the night or maybe you just can’t fall asleep. That Belgium Dark Chocolate Ice cream is your perfect mate to get you through.

Somedays, I prefer butter to cheese. But, cheese doesn’t mind. its never bitter.

 

 

7. Best Friends Don’t let you do stupid things, alone.

Sitting in a theater with big popcorn tub in your hands, you decide to bug the guy sitting infront of you.

All those foodies trying to shed a little flab.

The day you decide to be fit, healthy foods are ready to help you do that.

 

 

10. Best Friends bring Out the Best In you

The Night before your big math test and you are super drowsy. If it wasn’t for that cup of coffee and the munchies. Or, If you ask me I need to have my all time favorite dish right before, I am about to do something BIG.

11. Your Perfect Companion in almost everything and anything

Whether its that Awkward dinner date or that huge family get together. You can look at your Plate and you will know you are not alone.

 

 

12. Tags along with all your pals, School buddies, workmates, neighbors etc.

Everybody likes food. And, Food likes everyone.

 

So, Don’t you worry if you are doing a lot of things alone,
And DON’T YOU DARE FEEL LONELY.
The sight of which brings a smile on your face and makes your belly crumble with joy – eventhough its not an actual person, but its sure to keep you company no matter what. Love the one who loves you. Amen.

Why I started Going to the Gym?

How you’ve been ? Hope you all are doing great !
“Fitness” is a word everyone keeps talking about- its in the newspapers, its in the magazines, on the back of food packets and on your parents’ lips. Guidelines, Diets, what-to-eat, what-not-to-eat, how to get that actress’ thighs, tips for a tighter butt… la la la… the list is endless. All of them compelling you to try atleast one of those recommendations.
Today, let me tell you something about myself- I hate the idea of sweating , I am a foodie and my idea of sport is shopping.
Recently, I decided on going to the gym. Why? Here are the pointers :

  1. Embarrassment of Fainting

  2. If you skip breakfast, on the day you have that class where you have no option to sit. One moment you were standing and the next, whole class is trying to comfort you. I hate that sort of attention.
  3. Needed to fit into “that” beautiful dress
  4. I saw this insanely beautiful dress and it just won’t fit me the way its supposed to. I could do a little sweat to wear that beauty.
  5. Can’t stop Munching
  6. Being a foodie, I can’t stop wondering what I am going to eat next. Sight of a yummy dish gets me drooling.
  7. Obsessed over those thin legs every Korean Drama actress has

  8. Thin Legs make you look in anything and everything you wear.
  9. I watched Victoria Secret Fashion Show

  10. And, felt like two models will have to combine to make me.
  11. Boyfriend

  12. I feel anybody who is dating or crushing some hot guy can understand this. He just seems to get hotter and I just keep munching. I don’t want to hear later- That Couple’s like Laurel and Hardy!.
  13. Diet control defaulters

  14. I can’t seem to control my diet. I can’t seem to be regular at the healthy diet schedules. Every time a new restaurant opens in town, I am making weekend plans for a meal.
    So, atleast the workout will help me reduce the guilt.
  15. Size dilemma

  16. So, I have a lean top and broad bottom. It’s hard to be sure of any clothing, other than skater dresses. Can’t wear skater dresses all the time, right ?
  17. Online Shopping

  18. For a body with flab at a lot of places, Its so hard to be sure of what will fit you. Ordering online becomes a frustratingly confusing experience.
  19. Unsuit Jumpsuits

  20. People tell me – “Why don’t you Wear Jumpsuits? you have long legs.” Well, long legs are not all you need to fit into jumpsuits.
  21.  Stress Buster

  22. Unless you really like your temper getting on your nerves and then on people’s faces, take all that to the gym and make something productive out of it. You’ll be surprised !
  23. Upcoming Vacation

  24. Everyone wants to/needs to look amazing in Vacation pictures.
  25. These were the reasons to why I started hitting the gym.
    Although I firmly believe, Whatever happens, You should Love your body – every curve and every edge.
    I will always be proud of mine.

I found this and my mouth remained open for like 10 seconds. They have an INDEX of recipes,  like a list of dishes under sections. You can choose from a wide variety like desserts, meat, breads, soups, drinks etc. Eventhough, the index is dated in 2012… I feel a lot of those Masterchefs will find it useful. Being recommended by Top Chefs, the difficulty bar is raised kind of high. My favorite is Roasted red pepper soup with broccoli pesto trees.
