The Stir-fry of Your Life

How often do you find yourself wrapped up in a warm blanket and procrastinating to go out ? Your tummy rumbles, but you had pizza yesterday so that’s out of question. This is me every Saturday and Sunday. So, I figured out a simple and to the point recipe for a stir- fry that tastes good as it is, ofcourse if you want you can always have it with a carb of your choice. Most importantly, it only takes 15 minutes to prepare. Almost all ingredients can be found in the vicinity of your refrigerator. Now, enough with the yada yada that nobody’s gonna read. (Thank you person of lovely nature who is reading this !)

From My Kitchen to Yours :

Home-Style Chinese Stir Fry

What You Need:

  • 1 tablespoon of Garlic (minced)
  • 1 tablespoon of Ginger (grated)
  • Cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water)
  • 1 tablespoon of Sesame seeds (optional, if you like them)
  • Chopped Green chillies as per liking
  • 2 bowls of Diced Vegetables of Your Choice

(Bell peppers, Mushrooms, Onions, boiled/cooked broccoli)

  • 1 bowl of Protein of Your Choice

( Tofu or Paneer or Chicken : cubed and pan-fried)

  • Salt and Pepper
  • 2 tablespoons of Oil

Method :

  1. On medium heat, heat up a pan with oil.
  2. Lower the heat, add in garlic and ginger sauté for 10 seconds. Make sure the garlic and ginger don’t burn or become dark brown.
  3. Switch to Medium heat. Now add in the Vegetables, mix them until they are cooked a notch below per liking. (as they will continue to cook when you add your protien choice) Also, I prefer keeping my veggies slightly crunchy for stir-fry.
  4. Lower the heat. Now put in the soy sauce, cornstarch slurry and seasame seeds (if you are using), mix well to incorporate.
  5. Add in the chillies and the tofu/paneer/chicken. Switch to medium heat and keep stirring for at least 5 minutes.
  6. Switch off the heat, Season with salt and pepper. Combine.
  7. Serve and enjoy !

Mezzaluna: History, Gratitude and Love.

Moving to a new city, discovering places to hang out and developing personal favorites – the order seems to co-exist in everyone’s college life. Being a foodie at heart, for a place to be my favorite hang out spot – it must include a good treat for my taste buds. When I moved to Mysore to pursue my Undergraduate degree, ‘Mezzaluna’ became one such personal favorite.

Mezzaluna has two outlets – a Chinese one and a Continental – Indian one. My preferred outlet is the Continental – Indian One. Mezzaluna has been a constant in my life in Mysore – from fulfilling cravings on cheat days to celebration nights, from lonely Wednesdays to take-out Saturdays. Since, me and my friends are really grateful to have a place like this in our boring small town college lives, I decided to do a post completely dedicated to our very own ‘Mezzaluna’.

In Conversation with the Founder/Owner

First things First, here is all you need to know about the History of Mezzaluna. A conversation with the man behind the amazing Mezzaluna Restaurants revealed what makes Mezzaluna so different. Read on!

Tell us about Yourself. 

Nanju Ramappa, an LLB graduate. I am a native of Kodagu district of Karnataka. After my graduation, I joined Taj Residency (presently called Taj Vivanta) and worked there for 7 years. The following 15 years were spent working abroad, until 2004 when I decided to open my own restaurant.

Let us start from the beginning, how did it all begin ? 

In the year 2008, I began a chinese restaurant with the name ‘Mezzaluna Chinese’. The initial pick-up of the restaurant took about a month, following which the sailing was pretty smooth. By 2009, I decided to open another outlet offering Indian and Continental cuisines.

Opening a Continental restaurant in a city which rejoices Bisibhele bhath… What were your influences? 

Since, I have worked in kitchen and service before during my working period, I already had a good knowledge and the right influence. I indulge in both kitchen and dining – which makes me well aware of the customers expectations and hence cater accordingly.

How was the initial response?

Initial response was slow. But, once recognized – people were surprised to learn that a non-authentic chinese looking person could run a chinese restaurant.

What does Mezzaluna mean anyway ? 

‘Mezzaluna’ means half-moon in Persian and in Italian it refers to a moon-shaped blade used to chop vegetables.

 

Tell us more about your journey as a restaurateur. 

From the beginning, I never believed in advertisement. My way of functioning is give utmost attention to the customer’s requirement and serve quality food; And eventually, the word of mouth will be a great form of advertisement.

How has Mezzaluna evolved over the years? 

We have been seeing a steady growth, we make sure we update our menu every six to nine months – delete items which are not so popular, and add in new dishes. 

How do you deal with the criticism? 

We take all our criticism in a positive away. We act on the problems fast and make sure they are not repeated.

People often say Continental food is Bland. Do you think you’ve managed to change a few opinions? 

Continental food maybe bland. But, we’ve been able to cater it to our customers after enhancing the flavors, according to their expectations.

What are some of the challenges you face as a restaurateur ? 

The only constraint we face is shortage of man power , especially in the utility and house-keeping staff.

In a budding city like Mysore, what is your secret to keep customers coming in? 

Food Industry always has challenges. Everyday a new outlet opens up, giving the older ones a fair competition. But, what I believe is as long as we maintain the quality and service standards there is nothing to worry about.

What makes Mezzaluna different from its contemporaries? 

Good and Attentive Service ! If one has noticed, most places in Mysore lack that. But, in our case we have been able to sustain the quality of service. I always make my presence felt at the restaurant and keep monitoring the work on daily basis.

What are your favorites from the Mezzaluna menu? Give us a 3 course meal suggestion.

Barbecue chicken wings for starters, Steak for main course and hot chocolate fudge for dessert.

Where do you see Mezzaluna 15 years from now?

My Personal Take :

Mezzaluna is not the kind of restaurant that would be known for it ambiance, but a place which will invite you back for its delicious food and hospitable service. Time after time, we often observe change in quality and taste of food in other restaurants – but Mezzaluna stands tall in terms of consistency and quality of taste. I would recommend this place for a catch-up dinner with your friends, probably one of the best options in Mysore. You must try the Chicken Lasagna, Honey Chilli Chicken and Lime Soda here.

I remember, It was mid October 2012 and we were introduced to this awesome place, mezzaluna by a group of Mysorean friends. 

The first meal I had there, impressed me so much that I looked forward to get back again and try out another dish. And since then, I didn’t stop going back to this place. This place serves good continental dishes. The quality and quantity, both doesn’t fail to satisfy my taste buds. Also their Indian dishes are upto expectations. 

Few of my favourites are: polocatnia, ala Mezzaluna, chicken mexican, Cajun pasta, lamb lasagna. Also how can I forget their barbeque chicken wings?? 

Butter chicken, chicken tikka masala, chicken and egg rolls and biryani are also good. 

 The price is reasonable and student friendly 😛 

When I need good food and don’t know where to go, I guess Mezzaluna saves my tummy all time 😀

Bake these Super Easy Chocolate Chip Cookies With Me! 

Chocolate Chip Cookies are my favourite. And, I know I am not the Only one. Here is My Super Easy, Super special and No Fail recipe. I like my cookies crunchy outside and soft inside. This recipe works good for other kinds of cookies too, you can replace the chocolate chips with Walnuts to make wholesome walnut cookies.


Preparation Time: 1 hour 15 minutes 

Makes: 20 cookies, each of 5cm diameter

What You Need :

(in order of requirement in the method)

1 cup of Unsalted Butter, softened (not melted)

1 cup of Brown Sugar 

1/2 cup of White Sugar (regular sugar)

2 medium sized eggs

1/2 teaspoon of Vanilla extract 

2 cups of Flour 

1 tablespoon of Salt 

1 teaspoon of Baking Powder 

2 cups of Chocolate Chips or Crushed Milk Chocolate bits

1/2 cup of Crushed Walnuts or Cashews (optional) 

1 tablespoon of full fat Milk (optional)

Baking Paper 
Equipment Requirements:

Baking Oven

1 Large sized Bowl

1 Medium Sized Bowl 

Spatula, Table spoon and Tea spoon

Baking Tray 

Blender

Note:

I used Cadbury Dairy Milk Silk for the chocolate chips. Instead of Unsalted Butter, I used Regular Salted butter from Amul and skipped the salt in the recipe. Walnuts add crunch to the cookies.

Method :

1. Preheat Oven 320° c 

2. In a large Bowl, take the softened butter and add brown sugar and white sugar to it. Mix really well. Use a blender to form a creamy mixture. 

3. To the large bowl, add the eggs and mix thoroughly. 

4. Next, add in the Vanilla extract and mix again. 

5. In a separate bowl, combine the flour, salt and baking powder.  Add these to the large bowl, Fold by Fold. Mix thoroughly. 

6. Using a spatula or spoon, fold in the Chocolate chips, walnuts and milk. Do not use the blender in this step. Our cookie dough is ready.

7. Spread the baking paper over your baking tray. 

8. Place about a 2 tablespoon of the cookie dough on the tray. A two table spoon dough makes a single cookie of 5 cm diameter. So, make sure there is ample of space between each cookie dough. Don’t over overcrowd the baking tray.

9. Bake in the Oven at 320°c for 12-15 minutes. Keep an eye on the cookies in the oven for any burning, as ovens and their features vary – my oven directions may not be exact for your oven.

10. Once they are done, place the cookies in the chiller or just keep them out for a while. Allow them to cool off. 

ENJOY! 

You can save these cookies in a cookie jar for a munch later. They taste fresh and lovely even after 3 days.

Discover Fondant Cakes with Muffin County, Mysore

We all have fantasised over the pretty Cakes we see on television and social media. When I was a little girl, the most sought after cake was an edible doll dress… The standards have changed so much now and with the moldable fondant in play – the doll, her dress, her house, her shoes, her hair – all are made edible.

Although Fondant Cakes are popular and common, they are still rare in small cities and towns in India. Recently, for a friend’s birthday I was hunting for a Baker who could bake a specific design I wanted… And that specific design could only be done in fondant. After a couple of calls, I learnt about  this home Baker in Mysore, who went by the name Muffin County. [Thanks to my Ultra Humble friends at Fairy’s Touch Cakes ]

 

 

 

I searched for the Baker’s Facebook Page and found some pretty impressive Fondant Cakes. The reviews also screamed 5 stars. Soon enough, I got in touch with MITRA – founder and baker at Muffin County and explained her my idea.

There are several pros and cons of Ordering a cake from a Home Baker.
Pros: The cake will always be fresh and exclusive. Home Bakers are passionate about what they do, unlike cake shops, so they always put in a lot of love and effort in their baking. You can be sure that- your specifics will be taken care of specifically, they respect your choices.
Cons: They don’t usually keep flavour samples for you to taste and choose from unless you go for their exhibitions, as they believe in fresh baking. Delivery services are usually not available. Their Locations can be tricky, as they live in residential areas.

Now, let me tell you a thing about fondant icing – it’s definitely pretty but, it can never taste as good as a well baked cake. So, I knew I was taking a risk as I had never tried their cakes before and fondant doesn’t taste like anything but, sugar. All I was sure of was – it’s going to be pretty and for the taste of the cake… Well, I just prayed.

When I asked her for flavour options, I was really amazed by the long list of flavours in cakes and frosting, she texted me.

I chose Chocolate Cake with Chocolate Mousse. It was the first time I had heard about that combination – I felt since both the components taste good on their own, the combination would be a hero. Although, I wasn’t sure at all on how the cake or the mousse tasted like from Muffin County.

The Judgement day arrived and after the birthday song ended – I finally had a big… Big….sigh of relief. The cake was spectacular – it was everything I had wished it to be. It was beautiful and the fondant pattern was delicate and exactly what I wanted. The chocolate cake inside tasted fresh and moist. The lightly sweetened chocolate mousse with a melting soft texture – balanced the sweetness of the fondant and the cake. It was a hero combination after all. And that’s when I realized,  sometimes all you need is a little leap of faith.

Monsoon has finally arrived in Mysore, so its the perfect weather to curl up in a blanket and pamper yourself. Talking of Pampering whether its your lover, mother , best friend or yourself, a home-baked Aussie cupcake (or cupcakes) will definitely work.

I had mentioned earlier about ‘ Fairy’s Touch’, the Melbourne Cupcake place I discovered recently – run by this amazing couple with a passion for doing what they do.

So, here’s a little ice-breaker with Mrs. Poornima, the co-founder at Fairy’s touch .

Australian trained couple settled in Mysore, who love to bake delectable homemade cakes and cupcakes.

Tell us something about your journey.

They say it is never too late to learn! Our passion for learning culinary arts got us to pack our bags and fly across to Australia. At the age of 37, Som graduated out of Kangan Batman Institute of tafe, Melbourne. While Som had his heart and soul into commercial cookery, I (Poornima) had the opportunity of attending a workshop under the guidance of Miss Jennifer Graham, who is known as the ‘Cupcake Queen’ of Australia. Why call it ‘Fairy’s Touch’?

Till date I really do wonder if it is a myth or reality that a dimple in the chin refers to as the fairy’s Touch. I am blessed to have a dimple on my chin. Hence the name.

How Do you function ?

At Fairy’s Touch, Som does the baking and I do the frosting. They say a cupcake is at its best only when it is frosted. We are home bakers, who believe in bake fresh method. We do not store cakes or cupcake as we bake on order.

So, do you guys do orders ?

Yes, we do. We also conduct exhibition and sale of cupcakes every fortnightly.

What would be your FAVORITE kind of cupcake ?

Our favorite cupcake is the Red Velvet cupcake filled with cream cheese

Which is the most loved cupcake from your menu ?

It’s hard to choose any particular flavor as we keep experimenting and bring out new flavors with each passing day. Best selling ones are our chocolate cupcakes topped with Rich chocolate and Choco Mocha.

What is the hardest thing about making your passion your job ?

Making your passion your job does not give enough time for ourselves, more so because we are home bakers it becomes difficult for us to differentiate between home and workplace.

What’s Next ?

Fairy’s Touch aspires to introduce to Mysore delicacies from across the world at affordable prices so that our customers do not have to travel miles to savor them.

Where Do you see ‘Fairy’s Touch’ 10 years from now ?

Our cupcakes must and will taste the same. We look forward in maintaining the quality, freshness, taste and hygiene for years to come. I promise, you will be able to taste their love for baking in each bite – as the mellow flavor of the cream tickles your taste buds, the soft light heart-ed cake will balance it all , giving you the right kind of sugar rush.
Being Home-baked, the cupcakes are Honestly Delicious. We all know the usual bakeries in town do not serve cupcakes which are fresh or promising ; unless pre-ordered and sometimes even then.

Their Chocolate Ganache frosting is probably the best frosting I have had over a cupcake – The flavor being so rich and the texture thick and creamy. I feel what I notice most generally in any dessert is the sugar balance – and their cupcakes ace it.
If you like fruit flavors,  you have a lot of options to choose from. They even have Blue Curacao frosting over Blueberry cupcake – well that’s something ?!

In an informal conversation with her, I learnt that they specialize in New York styled Sliced Pizzas as well. Let’s hope beside desserts, we get a taste of their other culinary masterpieces in the future.

Review: The Old House, Mysore

IMG_20160409_220309The Old House is an Organic Italian Cuisine Restaurant located in Mysore, Karnataka (India)  The Restaurant promises pizzas, pasta and pâtisserie, the subtitle reads.

 

 

I have visited this place quite a number of times now. Previously known as Maya Bistro, after the adjacent located Maya Boutique. Besides the name, the management also seem to have worked on the quality and service.

Ambiance:

Classy Wooden Furniture surrounded by little pieces of art and greens, with options of sitting indoor and outdoor. By Late evenings- Dim Lights, bright trees and light-hearted music all add a romantic feel to the place. Although, its equally amazing to visit this place in the day – sunshine filtering through leaves,all around you – You know what I mean.
The Kitchen seems to be outdoor, so you can actually see them using fresh ingredients  and placing (or, shoving) the pizza in the wood fired oven. Also, the desserts are put on display refrigerator, so you can choose what you’d like.
The Indoor sitting area is air conditioned and well lit. A Wall of Graffiti art and cozy sitting arrangements gives the place a young yet sophisticated appearance; I could sit there sipping a smoothie in a good conversation, for hours.
Eventhough its labelled as a Restaurant, it has more of a café feel to it.

Service and Staff: 

Usually, the order takes the normal expected time to come. But, on weekends and comparatively crowded days it might take time. The staff is quite decent, generous and most importantly well versed with what’s on the menu. They know what they are serving and will take special interest in explaining the dish.

The Menu Spread:

As I said earlier, the place has a café feel to it. The menu reads-“La Cucina Italiana”, the dishes are well described and incase you are wondering the staff is quite helpful to suggest and elaborate.
Initially, on the menu they have usual continental breakfast dishes – Pancakes, Omelettes, Sunny side up, Croissants etc. Then, they have appetizers like Bruschetta, Garlic bread, Crostini. Also, they have various variety of breads available to order and to take. Surprisingly, they also have Hummus on the menu, incase you are a bit mediterranean with your breads. Then, there’s decent selection of Pasta and Risotto dishes. Followed by, their much advertised- Wood Fired Pizza – the options are plenty and there’s no doubt on the quality, quantity and variety of the toppings. They have options for vegans like Soy milk smoothies, Vegan Brownie and Soups. The menu also has Sandwiches, Mocktails, Smoothies, Juices, Hot beverages and of-course Salads. There’s actually a good number of salad dishes and not just the usual fruits or Caesar. So, if you are avoiding carbs and cheese – this could be your place. Dessert options of Cheesecakes, Apple Pie, Brownies, Red Velvet cake, Muffins, Black Forest Pastry, Banana Walnut cake etc are on the menu, served according to availability.
A Daily Chef’s Special Menu is also put up, you could consult your waiter about it.
Additionally, they also do breads and cookies on order.

The Food :

What I have had :  Mushroom Bruschetta, Pink Sauce Penne, Capitoline Pizza, Heaven’s Garden Pizza, Virgin Pina Colada, Red Velvet Pastry and Chocolate Cake. 

Quality wise I feel the food is amazing. The Portions were Apt, The ingredients were fresh, the pasta was al denté , the homemade sauce had no artificial taste, the bruschetta and the pizza didn’t lack toppings, Pizza had the right proportion of cheese, sauce, dough and veggies, the pina colada was refreshing and the red velvet was satisfying.
On the other hand, The Chocolate cake was sad because it tasted more or less like a walnut brownie topped with Hershey’s syrup.

The Experience:

For Mysore, this place is one of its kind. In my three years here, I have hardly seen a place with such quality and service.
Being a vegetarian place (serves egg), the kind of popularity and attention it has achieved is outstanding; but once you pay a visit- you would know how they did it. The Management wasn’t wrong in advertising the wood-fired pizza, it actually makes the cut. And as I mentioned the ambiance is so welcoming, I could sit there for hours. Besides the coziness, The flavors were fresh and balanced- honestly that’s how I see Italian Cuisine.

The Ambiance will lure you but the food will make you come back.

Bake The Best Mud Cake Ever with Me 😊

The Festive season seems to be over 😔, but you don’t need a festival to splurge over the mud cake I am talking about. 😇
Don’t worry this recipe is ‘No Fail ‘. You don’t need special baking skills, all you need is desire to bake, an oven and the ingredients. You will fall in love with the rich moist flavour and the softness of the cake – that I bet won’t be easy to share.😜

I know usually the recipes you find online are not reliable but this one is. I promise. And dont worry about expenses, its going to be pretty light on your pocket.

HEAVENLY CHOCOLATE MUDCAKE

What You Require :
An Oven: preheated at 300°F or 150°c
A Stove
Pan with a cup of water
Heat safe bowl: Big enough to fit over the pan
Measuring Cup, whisk etc.
Baking Dish: About 8 cm in diameter and 10 cm deep
Parchment paper/baking paper/the alternative*
A Knife, to check if the cake is done.

*The alternative: grease your baking dish with butter and lightly dust flour over it – A thin layer will be formed which will prevent the cake from sticking to the dish.

Ingredients :
(in order of need)
1 1/4 Cups or 250g – Unsalted Butter
8 ounces or 250g – Chocolate
2 3/4 Cups or 550g – Granulated Sugar
2 tablespoon – Instant Coffee Powder
3/4 Cup or 175ml – Hot Water

1/2 Cup or 125ml – Milk
4 – Medium sized Eggs

2 Cups or 300g – All Purpose Flour
1/2 Cup or 55g – Cocoa Powder
1/2 teaspoon – Baking Soda
2 teaspoon – Baking Powder
1 teaspoon – Salt
2 tablespoons – Vegetable Oil

Method:
Preheat your oven as mentioned before.

Step 1:
On the Stove, place a pan with a cup of water, keep it on low heat. Over the pan, place your mixing bowl.

This is done to create an indirect source of low heat, inorder to prevent the ingredients from burning or cooking. We just want the ingredients to melt.

Step 2:
To the bowl,  Add Butter, Sugar and chocolate. Let it all melt.

Step 3:
In a cup, add instant coffee to the hot water to create a solution. And, add this to your mixing bowl (step 1 and 2)

Step 4:
Once all the ingredients have melted into a uniform smooth mixture, take your mixing bowl off the Stove.

(Melting may take time, so to save time you can do step 7, while monitoring the bowl over the pan. You can come back to this, when you are done with step 7 )

Step 5:
Add Milk to the bowl and mix it in, let the mixture cool for a minute.

Step 6:
Now add the eggs and use a blender or a whisk to blend it in. Make sure you do this before you go ahead with the next step.

Step 7:
In a separate bowl, combine the dry ingredients – combine flour, baking soda, baking powder, cocoa powder,  salt. Mix well.

Step 8:
Add the mix from step 7, to the batter of step 6.

I prefer Adding a little amount of the dry mix and mixing it well. Then followed by little more amount and so on. This makes it easier to mix.

Step 9:
Pour in vegetable oil and use the hand blender one Last time for about 2 minutes.

This will make sure your batter is homogenous.

Step 10:
Keep your baking dish ready with baking paper (or the alternative). 
Add your batter to the baking dish, fill it about 1 cm less. This will prevent your batter from spilling out, when it begins to rise.

Step 11:
Place the baking dish in the oven and bake it for 1.5 hours maximum at 300°F or 150°c.

Keep a Check on your cake with a knife. For a perfect bake, your knife will come out clean, when poked deep in the cake at the centre point.

Step 12:
Once the cake is done, all it to cool for good 15 minutes. Take it out and enjoy!

HACKS :
Chocolate – I used Dairy Milk Silk which is fairly sweet enough, so I reduced the amount of sugar I put in the batter.
Butter – I used Amul Butter, which is salted. So I just skipped adding salt to the batter.

2. FOOD NETWORK
I found this and my mouth remained open for like 10 seconds. They have an INDEX of recipes,  like a list of dishes under sections. You can choose from a wide variety like desserts, meat, breads, soups, drinks etc. Eventhough, the index is dated in 2012… I feel a lot of those Masterchefs will find it useful. Being recommended by Top Chefs, the difficulty bar is raised kind of high. My favorite is Roasted red pepper soup with broccoli pesto trees.

3. TASTE OF HOME
This one has innovative ideas with a little effort. Doesn’t require a totally new recipe but rather smart moulding of an old one.
